Here are a few other desserts we made over shavous. Notice how all of them are different ice-creams as some of the company we are having (not to mention some of my family members) do not count cake or cookies as dessert :).

Strawberry Ice-cream Pie:
2 pie crusts
10 oz fresh strawberries (you can use frozen but defrost them first)
1 c sugar
1 Tbps lemon juice
2 egg whites
pinch of salt
8 oz whipped cream (whipped)
Beat strawberries, sugar, egg whites, lemon juice and salt until stiff (about 10 min)
Fold whip into strawberry mixture and pour into crust. Freeze

Caramel Ice-cream
4 eggs
1/2 c sugar
8 oz whip cream
1/2 Tbsp vanilla sugar
1/2 c pancake syrup
1/2 c peanut brittle
caramel sauce
Beat egg whites and sugar until stiff, Whip the whip and slowly add the yolks, vanilla sugar, and pancake syrup. Fold mixtures together and freeze. When ready to serve scoop it out and driveler caramel sauce and top with brittle.

Chocolate Ice-Cream pie
8 oz whip cream
3 oz chocolate spread
2 eggs
1/4 c sugar
1/2 tsp vanilla extract
1 pie crust
chopped Viennese crunch
Mix chocolate spread, vanilla and egg yolks. Beat egg whites with sugar until stiff. Whip the whip. Fold all mixtures together and pour into pie crust. Sprinkle chopped Viennese crunch on top and freeze.

Strawberry Crunch
10 oz frozen strawberries
3 Tbsp vanilla pudding
1 Tbsp cornstarch dissolved in water
Place strawberries and pudding in a pot, cover with water and simmer, let it reduce. Add the cornstarch and mix well breaking up any whole berries left.
Crunch:
2 c rice krispies
1 c ground nuts
1/2 c brown sugar
1 stick margarine
Mix all together and then place on greased cookie sheet. Bake on 350 for 15 min.
